Pandesal and Spanish bread | Complete recipe from start to finish. The family that bakes together… stays together.
Pandesal (pronounced as pan de sal) is the local bread roll in the Philippines. Sold in every local bakery, you just can’t miss it. Usually paired with butter, or bottled Spanish sardines, or canned spicy tuna your options to pair up with this bread are unlimited. The only limit is your imagination. A lot of memories are tied up when eating this bread, because we eat this everyday when we were little. Normally I would wake up early in the morning (5:30am), so we can get them freshly baked at a local bakery near our house(about 500 ft away). There are so many things I can tell you about pandesal, but you just have to try it for yourself. And oh, when you try it… Try if you get a freshly baked pandesal.
This is a complete recipe from start to finish. It’s easy, even our own kids can make them. Comes with a bonus, on how to make a “Spanish bread”, the 2nd famous bread in the Philippines (next to pandesal). Having the same bread texture as pandesal, the Spanish bread comes with a filling you cannot resist. YUM YUM, it is so good.

RECIPE (TEXT VERSION)
Pandesal and Spanish Bread recipe
Spanish bread filling: (Pre-preparation)
100g bread crumbs (approx 5 slice of bread, leftover, beginning and ends)
100g brown sugar
1/2cup of butter
Food processor the above ingredients.
Pandesal Recipe:
275g bread flour
275g all purpose flour
100 g granulated sugar apprx 1/2 cup
1 tbsp instant yeast
1 tsp salt
Step 1: Heat the liquid.
Mix the 275 milk 2% / whole/ evap and 1/4 cup unsalted butter. Microwave for 2 minutes
Step 2: Put ingredients together.
Put together in the bowl:
Add 1 egg
dry ingredients
warmed liquid ingredients.
Step 3: MIX and Window test.
Stir under 10 minutes using 3 modes respectively. Mode 1, 2 and 4 into equal time(approx 3mins 20secs each). When done, do a window test on the dough. (that the dough is holding as shown in the video)
Step 4: First Rise. Stir dough and apply oil on dough and on the sides. Set the oven to warm and hold. When ready, leave dough for 10 minutes.
Step 5: Mold Pandesal and / OR Spanish bread.
Step 6: Second Rise Set oven to warm and hold. When ready leave the molded pandesal/Spanish bread for 30 mins. Then take out the bread out of the oven.
Step 7: Prepare to bake the Pandesal/Spanish bread Set oven 350F for 15 minutes. Turn tray halfway (7 min.) (on glass tray)
